What uses the memory in Space Engineers
A ship or a station is not one object but an assembly of blocks, each simulated with its own mass, integrity and connections. Big grids are costly both to keep and to update, and they stay costly when the people who built them log off. Mods that add block types lift the baseline before anything exists in the world.

Where people get it wrong
Letting grids multiply and throwing memory at the result. Clearing out abandoned ships and debris helps a struggling server more than any upgrade, because grids nobody owns are still being simulated.
